- 1 bunch kale, stems removed and leaves chopped
- 2 cloves garlic, finely chopped
- 8 regular size wrap
- 2 blocks haloumi cheese (180g each), grated
- 1/2 bunch mint, leaves picked and coarsely chopped
- 4 spring onions, finely chopped
- 1/4teaspoons nutmeg powder
- 1tablespoons vegetable oil (and extra for frying)
- 1 lemon wedge (to serve)
- 1/4teaspoons chilli flakes (optional)
- 1teaspoons sumac (optional)

Description
Using wraps instead of homemade dough make this Turkish inspired dish an weeknight winner. Even kale haters will be won over by the filling with added haloumi.
Method
Step 1 of 4
Heat a large frying pan over medium heat with 2 tsp vegetable oil. Add kale and garlic. Season with salt and pepper. Stir constantly for 2-3 minutes or until kale is wilted. Transfer to a bowl and allow to cool.
Step 2 of 4
Add haloumi, shallots, mint, nutmeg sumac (optional) and chilli flakes (optional) to the cooled kale mixture. Stir well to combine.
Step 3 of 4
Lay out 4 of the wraps and divide the filling between them. Leave a bit of a border around the edge to avoid the filling oozing out and burning in the pan. Place the remaining 4 wraps on top of each like a sandwich to create the gozleme.
Step 4 of 4
Place 2 large frypans on medium-low heat. Add a bit of oil to the pan and cook each gozleme for 2-3 mins each side or until golden. Cut each gozleme into quarters and serve with lemon wedges. Enjoy.
