- 2 cup rolled oats
- 1 cup plain flour
- 1 cup desiccated coconut
- 1/2 cup brown sugar, firmly packed
- 125grams butter, chopped
- 1/3 cup golden syrup
- 1teaspoons bicarbonate of soda
- 2 1/2tablespoons jam

Description
The perfect combo of crunchy and gooey, follow this easy cookie recipe to make these sensational coconut and oat cookies with a soft jam centre.
Method
Step 1 of 4
Preheat oven to 180°C/160°C fan-forced. Grease and line 4 baking trays with baking paper.
Step 2 of 4
Combine oats, flour, coconut and sugar in a large bowl.
Step 3 of 4
Place butter, syrup and 1/4 cup water in a saucepan over medium heat, then cook, stirring, for 2 minutes or until butter has melted. Remove pan from heat. Stir in bicarbonate of soda until mixture foams. Add to dry ingredients, stirring well to combine.
Step 4 of 4
Roll tablespoonfuls of mixture into balls and place, 5cm apart, on trays. Press down with back of spoon to create 5cm rounds, then use back of teaspoon or your thumb to make indentations in middle of cookies. Fill each indent with 1/2 tsp jam. Bake for 15 minutes or until golden. Cool on trays before serving or storing.
