  • 1/2 cucumber, seeded, cut into cubes

  • 100grams cherry tomatoes, quartered

Description

This loaded Italian style rice salad makes a tasty and hearty lunch or can be served a side to a barbecue.

Method

Step 1 of 2

In a small jar, mix the zest and juice of half a lemon, garlic cloves, italian seasoning and olive oil. Loosen the rice out with a spoon or wet hands so that the rice grains are separated.

Step 2 of 2

In a large bowl, mix leftover rice and the rest of the salad ingredients. Drizzle the dressing and mix thoroughly. Serve with chopped fresh herbs like basil or parsley if desired.
