  • 500grams brown rice, ready cooked
  • 2 large limes, juice and zest
  • 800grams mixed beans, drained
  • 2teaspoons maple syrup
  • 340grams baby corn, chopped
  • 1 bunch coriander, fresh, chopped
  • 1 large red capsicum, diced
  • 4 spring onions, sliced
  • 100grams feta, crumbled

Description

This simple Mexican style salad comes together quickly and is delicious hot or cold.

Method

Step 1 of 3

Heat the rice according to pack instructions and tip into a large bowl. Stir in the lime zest.

Step 2 of 3

Add the mixed beans, spring onions, baby corn, capsicum, chopped coriander, lime juice and maple syrup to the rice and toss well.

Step 3 of 3

Top with crumbled feta and serve.
