  • 100grams risoni
  • 100grams sundried tomatoes, drained
  • 1/2 bunch basil, leaves picked and chopped
  • 200grams mozzarella, ball, torn

Description

This quick and easy risoni salad makes a lovely light lunch or picnic dish.

Method

Step 1 of 2

Pre-heat the oven to 180°C. Toss the onions and cherry tomatoes in a roasting tin with the oil and roast for 15 minutes.

Step 2 of 2

Cook the risoni according to pack instructions and drain. Tip into a large bowl and add the roasted vegetables, sundried tomatoes, basil and torn mozzarella. Toss and serve warm or leave to cool.
