Description
Bocconcini are pearl sized mozzarella balls, a perfect creamy topping for this pesto based salad.
Method
Step 1 of 2
Cook the pasta according to package instructions. Drain. Set aside half a cup of pasta water.
Step 2 of 2
In a large bowl, mix the pasta water, rotini, capsicum, cucumber, arugula, cherry tomatoes, pesto, half of the basil and half of the parmesan shavings. Top everything with the rest of the basil and cheese shavings.
