Description
This pasta salad ticks all the boxes: zesty, salty and nutty. Pancetta, pine nuts and broccolini combine to create a pasta salad recipe the family will keep requesting.
Method
Step 1 of 3
Cook pasta in a large saucepan of boiling salted water according to packet instructions or until al dente. Drain and place in a large bowl.
Step 2 of 3
Meanwhile, heat 1 tbs oil in a frying pan over medium heat. Add pancetta and cook for 4-5 minutes, turning halfway, or until crisp. Transfer to a plate. Heat another 1 tbs oil in the same pan. Add onion and capsicum and cook for 4 minutes or until softened. Add broccolini and 1/3 cup water and cook for 3 minutes or until just tender. Toss with pasta.
Step 3 of 3
Whisk remaining oil, zest and lemon juice in a jug. Season to taste. Add to salad and toss to combine. Transfer to a serving bowl. Break pancetta into pieces and add to pasta with pine nuts and basil. Serve.
