Dressing
  • 3tablespoons extra virgin olive oil
  • 3tablespoons red wine vinegar
  • 1 clove garlic, crushed
  • 1teaspoons Dijon mustard
  • sea salt (to taste)
  • pepper (to taste)
  • 250grams farfalle
  • 180grams Lemnos traditional fetta
  • 1 cup walnuts, toasted, roughly chopped
  • 1 punnet cherry tomatoes, cut in half
  • 100grams baby spinach, washed
  • 4 medium spring onions, finely sliced
  • parsley leaves (to decorate)

Method

Step 1 of 5

Cook the pasta to just 'al dente' according to the directions on the packet. Drain the pasta, stir through a little walnut or olive oil and set aside.

Step 2 of 5

Slightly break up the Lemnos Traditional Fetta into pieces.

Step 3 of 5

Make the dressing in a large serving bowl. Whisk the oil, vinegar, garlic and mustard. Add salt and pepper to taste.

Step 4 of 5

Add the walnuts, spinach, tomatoes and Lemnos Traditional Fetta to the dressing. Toss the pasta into this mixture and check the seasoning. Scatter with parsley leaves.

Step 5 of 5

Cover and chill to use later or serve immediately.
