- 1 green capsicum, deseeded (cut into thin strips)
- 1 Lebanese cucumber (sliced)
- 1/2 cup mint leaves
- 1 small red onion, halved lengthways (thinly sliced)
- 1/3 cup extra virgin olive oil
- 2teaspoons dried oregano
- 2tablespoons red wine vinegar
- 100grams Greek feta (sliced)
- 300grams fusilli
- 1 clove garlic, crushed

Method
Step 1 of 2
Cook pasta in a large saucepan of boiling salted water following packet instructions or until just tender. Rinse, drain and cool. Whisk oil, vinegar and garlic in a bowl. Season to taste.
Step 2 of 2
Toss pasta, tomato, cucumber, capsicum, onion, olives, feta and oregano in a large bowl. Add dressing, top with mint and serve.
