  • 1 Lebanese cucumber (sliced)
  • 1/2 cup mint leaves
  • 1 small red onion, halved lengthways (thinly sliced)
  • 1/3 cup extra virgin olive oil
  • 2teaspoons dried oregano
  • 2tablespoons red wine vinegar
  • 100grams Greek feta (sliced)
  • 300grams fusilli
  • 1 clove garlic, crushed

Method

Step 1 of 2

Cook pasta in a large saucepan of boiling salted water following packet instructions or until just tender. Rinse, drain and cool. Whisk oil, vinegar and garlic in a bowl. Season to taste.

Step 2 of 2

Toss pasta, tomato, cucumber, capsicum, onion, olives, feta and oregano in a large bowl. Add dressing, top with mint and serve.
