  • Cucumber, roughly chopped
  • red onion, sliced
  • Cherry tomatoes, quartered
  • extra virgin olive oil
  • red wine vinegar
  • Feta cheese, crumbled
  • Dried oregano
  • 1 handful Sweet crunch lettuce, shredded
  • Wholegrain pita

Method

Step 1 of 4

Slice some wholegrain pitta into strips then bake in the oven at 180°C for 10 to 15 minutes or until crisp.

Step 2 of 4

Combine some roughly chopped cucumber with a handful of quartered cherry tomatoes and a little sliced onion.

Step 3 of 4

Shred and add a few sweet crunch lettuce leaves, crumble over a little feta cheese and season with a pinch of dried oregano, then pack in a sealable container.

Make a dressing with a drizzle of olive oil and a tiny drizzle of red wine vinegar, then pack into a sealed jar or bag for your child to pour over later. Jamie's
