Dressing
- 3tablespoons extra virgin olive oil
- 1tablespoons lemon juice
- 1 small clove garlic, crushed
- 1tablespoons fresh dill, chopped
- 1 pinch sea salt
- 1 pinch freshly ground black pepper
- 1/2 cup always fresh pitted kalamata olives
- 1/2 cup always fresh roasted pepper strips
- 1 small cos lettuce, washed
- 1 punnet heirloom tomatoes, washed, cut in half
- 1 small red onion, peeled, finely sliced
- 1 lebanese cucumber, peeled, cut in chunks
- 3/4 cup feta cheese cubes

Description
In Greece they serve this salad with almost every meal, but it’s really a meal on its own. Featuring Always Fresh Kalamata Olives, feta cheese cubes, cucumber, lettuce, red onion and heirloom tomatoes and topped off with Always Fresh Red Pepper Strip
Method
Step 1 of 7
Make the dressing by whisking all the ingredients together and season to taste.
Step 2 of 7
In a large shallow bowl, arrange the outer leaves of the lettuce around the edge of the bowl (discard any tattered outer lettuce leaves).
Step 3 of 7
Tear the heart of the lettuce into small pieces.
Step 4 of 7
In a smaller bowl add the Always Fresh pepper strips, tomato, onion, cucumber and torn lettuce heart. Toss in 2/3 of the dressing.
Step 5 of 7
Pile into the centre of the large bowl. Scatter with feta cubes and the Always Fresh Kalamata olives.
Step 6 of 7
Drizzle with the remaining dressing and scatter with dill fronds.
Step 7 of 7
Serve chilled.
