  • 340grams Barilla Gluten Free Penne
  • 2 Hass avocados, peeled, cut into 3cm pieces
  • 2 tomatoes, cut into 1cm pieces
  • 1 lemon, zested, juiced
  • 2tablespoons extra virgin olive oil
  • 1/2 bunch coriander, leaves picked, chopped
  • 1/4 bunch continental parsley, leaves picked
  • 1 pinch dried oregano

Description

Brighten up your summer salad routine with this punchy, herbalicious and quick pasta salad. It's on the table in 20 minutes.

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling salted water according to packet directions. Drain pasta, then refresh under cold water.

Step 2 of 3

Place avocado, tomato, lemon juice, oil and chopped coriander in a large bowl. Toss to combine. Add pasta and gently fold to combine.

Step 3 of 3

Divide pasta among serving bowls. Season. Serve sprinkled with parsley, lemon zest and oregano.
