  • 1/4 cup white wine vinegar
  • 1 clove garlic, crushed
  • 1/4 cup basil, finely chopped (see Tip)
  • 320grams mix-a-mato tomatoes, halved
  • 2 Lebanese cucumbers, roughly chopped
  • 1/2 small red onion, thinly sliced
  • 60grams baby spinach leaves
  • 2 avocados, deseeded, chopped

Description

A fresh and beautiful pasta salad recipe overflowing with tomatoes, avocado and cucumber, finished with a silky garlic and herb dressing. Perfect for a picnic.

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling, salted water according to packet instructions. Drain, reserving 2 tbs cooking liquid. Refresh pasta under cold water.

Step 2 of 3

Meanwhile place oil, vinegar, garlic, herbs and reserved cooking liquid in a small bowl. Season, then whisk with a fork to combine.

Step 3 of 3

Place tomato, cucumber, onion, spinach and avocado in a large bowl. Add pasta and dressing, then toss to combine. Serve scattered with extra herbs.
