- 200grams dark chocolate, chopped
- 3 eggs, separated
- 2tablespoons Irish cream liqueur
- 50grams light brown sugar
- 1/3 cup cream
- 1tablespoons cocoa powder (to serve)
Description
This rich, adults only chocolate mousse recipe is quick, simple and indulgent.
Method
Step 1 of 4
Place the chopped chocolate and 120ml of water in a heat-proof bowl over a saucepan of boiling water, ensuring the bowl doesn't touch the water. Stir until melted. Remove from the heat and leave to cool slightly.
Step 2 of 4
Add the egg yolks and Irish cream liqueur to the chocolate and stir until well combined.
Step 3 of 4
Whisk the sugar with the egg whites in a metal bowl until stiff peaks form. Fold the chocolate mix into the egg whites gently, until well incorporated. Whip the cream to soft peaks.
Step 4 of 4
Divide the mix between 4 glasses and chill for 2 hours. Top each with a dollop of cream and a sprinkle of cocoa powder and serve.
