Description

Coconut macaroons are easy to whip up and delicious with a cup of coffee.

Method

Step 1 of 2

Pre-heat the oven to 150°C/130°C fan-forced. Whisk the egg whites and sugar with a handheld mixer for 2-3 minutes until soft peaks form.

Step 2 of 2

Fold in the coconut and vanilla and leave to stand for 10 minutes. Scoop teaspoons of the mix into your hand and roll into balls. Place on a lined baking sheet and bake for 10-12 minutes.
