  • 150grams mint dark chocolate, chopped
  • 6 eggs, whites only
  • 2tablespoons caster sugar
  • 2tablespoons whipped cream

Description

This light and airy mint chocolate mousse has just 4 ingredients and makes an impressive dessert.

Method

Step 1 of 2

Melt the chocolate in the microwave in 30 second bursts, stirring in between, until just melted. Whisk the egg whites to soft peaks in a large bowl with a handheld electric whisk. Add the sugar and continue whisking to soft peaks.

Step 2 of 2

Fold a tablespoon of egg white mix into the chocolate until incorporated, add the rest and fold gently until just mixed so you don't knock all of the air out. Spoon into glasses and set in the fridge for 1-2 hours. Serve with a dollop of whipped cream on top.
