Marinade Chicken
- 1kilograms chicken thigh fillets
- 100grams full fat plain yogurt
- 1/2tablespoons ginger , grated
- 1tablespoons oil
- 1teaspoons salt
- 1 lemon , juiced
- 1tablespoons kashmiri (or other mild chilli powder)
- 1tablespoons cumin ground
- 1teaspoons garam masala
Sauce
- 1kilograms fresh tomatoes (or 2 x 400g tinned tomatoes)
- 1/2tablespoons ginger , grated
- 4 clove garlic , chopped
- 4 cardamom pods bashed
- 5 cloves
- 2 bay leaves
- 1tablespoons kashmiri chilli
- 3tablespoons butter , cubed
- 100milliliter low fat cooking cream
- 1teaspoons salt
- 1tablespoons dried fenugreek leaves (optional)
- 1teaspoons garam masala
- 1tablespoons brown sugar
- salt & pepper (to taste)
- 1/2 cup water
Description
A butter chicken with a twist that is sure to please. You can adjust the chilli for the little ones.
Method
Step 1 of 7
Preheat your oven to 200 or 210 fan forced. Heat an oven tray until needed.
Step 2 of 7
Mix together all your marinade ingredients in a bowl. Cut your thigh fillets to whichever size you like. Marinate them in the marinade mix for at least 20 minutes, longer is fine but not essential.

Place your marinated chicken in a single layer & cook in the oven for about 30 minutes. I turn chicken over halfway through. Remove from oven & start your sauce.

Sauce: In a saucepan add your tinned or chopped tomatoes with 1/2 cup water, garlic, ginger, cloves, cardamom, garam masala, fenugreek leaves, Kashmiri chilli powder, bay leaves, brown sugar, salt & cream. Bring to the boil & simmer for about 10 minutes.

Take out the bay leaves. With your stick blender or blender, purée to a fine consistency.

Add your chicken pieces that were cooked in the marinade, leaving the marinade juices behind as it might be too salty.
Step 7 of 7
Bring it to a gentle simmer & add your butter. Cook a further few minutes until your sauce is nice & glossy.
