  • 3/4 cup whole egg mayonnaise
  • 1teaspoons Dijon mustard
  • 1 small lemon, juiced
  • 20grams parmesan, finely grated
  • 5 slices day-old white bread, torn into pieces
  • 5milliliter olive oil cooking spray
  • 6 rashers streaky bacon
  • 2 baby cos lettuce, roughly chopped
  • 30grams parmesan

Description

For a picnic-perfect classic salad, try our Caesar salad recipe - it's the only one you'll ever need.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper.

Step 2 of 4

Place bread on one half of baking tray and lightly spray with oil. Place bacon on other half of tray. Bake for 12 minutes or until bread is golden and bacon is lightly browned and crispy. Allow to cool slightly. Tear bacon into large pieces.

Step 3 of 4

To make the dressing, combine all the ingredients in a small bowl and season.

Step 4 of 4

Place lettuce, croutons and bacon in a large bowl. Add a little dressing and toss to combine. Shave parmesan over salad and serve with remaining dressing.
