- 1 Woolworths Bakery half baguette, very thinly sliced
- 2tablespoons extra virgin olive oil
- 100grams prosciutto
- 1 Woolworths Little Gem Lettuce 2 pack
- 2tablespoons dill sprigs
- 3 eggs, boiled,peeled, quartered
- 50grams shaved parmesan
- 3/4 cup Greek yoghurt
- 2tablespoons Woolworths garlic aioli
- 2teaspoons Dijon mustard
Description
Delicious as a side to almost any main, you can also make this more of a meal by topping with sliced cooked chicken.
Method
Step 1 of 5
Preheat oven to 180C or 160C fan-forced. Line 2 large baking trays with baking paper.
Step 2 of 5
Place baguette slices in a bowl. Add oil and season with salt. Toss to combine. Lay in a single layer, on 1 of the prepared trays. Separate prosciutto and lay in a single layer, on the remaining prepared tray. Bake for 15 mins, until bread is golden and prosciutto crisp. Set aside to cool.

Cut ends off each little gem lettuce and discard. Separate leaves and rinse under cold water if necessary. Cut any large leaves in half lengthways and arrange in a large shallow serving bowl. Scatter over dill sprigs.

Roughly break up prosciutto and scatter over lettuce. Add bread crisps, egg quarters and parmesan.
Step 5 of 5
Mix together yoghurt, aioli and mustard. Add 1-2 tbs of water to loosen dressing. Drizzle over salad. Serve.
