  • 1 green capsicum, cut into 1” squares
  • 2tablespoons fresh coriander, chopped (good handful)
  • 1 small red onion, cut into chunky 1” squares
  • 1packets the spice tailor original tikka masala
  • 1teaspoons vegetable oil
  • 5 medium chicken thighs, diced

Method

Step 1 of 4

Heat the oil in a medium-sized pan and add the spices, cook for 20-30 seconds.

Step 2 of 4

Add the chicken, capsicum and onions, season lightly and sauté for 1-2 minutes. Add the sauce, a splash of water and bring to a simmer.

Step 3 of 4

Cook until the chicken is coated in the sauce and cooked through. Note, this is not a wet curry.

Step 4 of 4

Stir in the chopped coriander and serve.
