- 1 cup peas
- 1 green capsicum, thinly sliced
- 1 onion, chopped
- 1/3 cup fresh parsley, chopped
- 2tablespoons worcestershire sauce
- 3 cup chicken stock
- 400grams can chopped tomatoes
- 3/4 cup black olives
- 2 cup arborio rice
- 2tablespoons oil
- 500grams chicken thigh fillets, diced

Method
Step 1 of 3
Heat 1 tbs oil in frying pan over moderately high heat. Cook chicken for 2 to 3 minutes, until lightly browned. Remove from pan. Reduce heat to medium, add remaining oil. Cook onion and rice for 2 minutes.
Step 2 of 3
Stir in stock, tomatoes, paste and sauce. Bring to the boil, stirring occasionally. Add chicken and simmer, covered, for 10 minutes.
Step 3 of 3
Add peas, capsicum and olives and simmer for 5 minutes or until all liquid is absorbed and rice is cooked. Serve sprinkled with parsley.
