- 1/4 cup korma curry paste
- 1 red capsicum, sliced
- 500grams papaya, deseeded and mashed
- 2 chicken breasts, thinly sliced
- 1 1/4 cup basmati rice
- 400milliliter coconut milk
- 1tablespoons olive oil
- 1 handful kaffir lime leaves
Method
Step 1 of 7
Over a low heat, heat oil and korma curry paste in a pan or casserole dish until fragrant.
Step 2 of 7
Add papaya and coconut milk and bring to the boil. Cover with a lid and allow to simmer.
Step 3 of 7
Add chicken and cook until chicken is cooked through.
Step 4 of 7
Add red capsicum and cook for another 2 minutes.
Step 5 of 7
Meanwhile cook basmati rice in a rice cooker or according to directions on packet.
Step 6 of 7
Serve papaya and chicken curry with basmati rice.
Step 7 of 7
Garnish with thinly sliced Kaffir lime leaves (optional). Season to taste.
