- 1/2 cup tandoori paste
- 1tablespoons brown sugar
- 1teaspoons garlic powder
- 1 cup Greek-style yoghurt
- 4 120g chicken thigh fillets
- 1 tbs vegetable oil
- 450grams SunRice microwave Medium Grain Brown Rice
- 150grams green beans, trimmed, halved
- 2tablespoons mint leaves (to serve)
- 1 lemon, cut into wedges (to serve)
Description
Try chargrilled tandoori chicken on a bed of brown rice for a dinner that's a cinch to make. Using microwave rice makes this recipe super convenient.
Method
Step 1 of 4
Combine paste, sugar, garlic powder and half the yoghurt in a bowl. Add chicken and turn to coat. Cover and refrigerate for 1 hour.
Step 2 of 4
Brush a chargrill pan with oil and heat over high heat. Add chicken and cook for 6 minutes each side or until charred and cooked through. Thickly slice.
Step 3 of 4
Meanwhile, heat rice according to packet instructions. Cook beans in a saucepan of boiling water for 1 minute or until just tender. Drain.
Step 4 of 4
Divide rice and beans among plates. Top with chicken and remaining yoghurt. Season with pepper. Sprinkle with mint and serve with lemon.
