- 1 1/2 cups jasmine rice
- 1tablespoons vegetable oil
- 2tablespoons honey
- 1tablespoons soy sauce
- 1teaspoons cornflour
- 500grams chicken thigh fillets, fat trimmed, thickly sliced
- 1/2packets Woolworths frozen winter veg mix
- 1/4 bunch coriander, leaves picked
Description
With succulent chicken thigh pieces and winter vegetables tossed in a simple sweet and savoury sauce, this flavoursome recipe makes a perfect easy dinner when you can’t be bothered to cook.
Method
Step 1 of 4
Rinse rice under cold water, then place in a medium saucepan. Add 1 ½ cups cold water. Cover and simmer over low heat for 15 minutes or until rice is cooked. Remove pan from heat and stand covered for 5 minutes.

Meanwhile, combine oil, honey, soy and cornflour in a medium bowl. Add chicken and stir to coat.
Step 3 of 4
Heat a large frying pan or wok over medium-high heat. Cook chicken mixture, in 2 batches, for 5 minutes, stirring, or until golden. Transfer to a bowl and cover to keep warm. Add vegetables and cook for 5 minutes, stirring, or until tender. Return chicken to pan and cook for 2 minutes or until chicken is cooked through.
Step 4 of 4
Divide rice among bowls. Top with stir-fry and serve scattered with coriander.
