Description

This nutritionally approved recipe hits all the right notes with succulent chicken breast fillets paired with nutty brown rice and crunchy slaw.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Cook rice according to packet instructions.

Step 2 of 4

Meanwhile, combine sesame seeds and garlic powder in a medium bowl. Season with pepper. Add chicken, one at a time, to sesame mixture and turn to coat. Heat 1 tbs olive oil in a large, non-stick ovenproof frying pan over medium heat. Cook chicken for 4 minutes on each side until golden brown. Transfer pan to oven and bake for 12 minutes or until chicken is cooked through. Thickly slice chicken.

Meanwhile, juice half a lime. Cut remaining limes into cheeks. Combine remaining olive oil, sesame oil and lime juice in a small bowl. Season with pepper. Place cabbage, carrot and snow peas into medium bowl. Pour over half of the dressing and toss to combine.

Serve chicken with slaw, rice, lime cheeks and remaining dressing.
