- 600grams thawed imported freshwater basa fillets
- 1teaspoons smoked paprika
- 2 lemons
- 1 cup couscous
- 3 tomatoes, finely chopped
- 1 red onion, finely chopped
- 1/3 cup sliced black olives
- 2 cloves garlic, crushed
- 1/4 bunch continental parsley, leaves picked
- 120packets Woolworths leafy mix salad
- 5milliliter extra virgin olive oil cooking spray
Description
Give basa fillets an Italian makeover by spicing them up with paprika and serving with puttanesca couscous. This nutritionally approved family recipe won't disappoint!
Method
Step 1 of 4
Spray fish with oil. Sprinkle with paprika. Heat a large non-stick frying pan over medium-high heat. Add fish and cook for 3 minutes each side or until browned and cooked through. Remove from heat.

Meanwhile, zest and then juice one of the lemons. Cut remaining lemon into wedges.
Step 3 of 4
Place couscous in a large heatproof bowl. Cover with boiling water. Cover bowl and stand for 5 minutes. Fluff couscous with a fork to separate grains.
Step 4 of 4
Add tomato, onion, olives, garlic, parsley, lemon zest and juice to couscous. Stir to combine. Place salad leaves on serving plates. Top with couscous, then with fish. Serve with lemon wedges.
