  • 1tablespoons crushed chilli
  • 1tablespoons salt-reduced soy sauce
  • 2 cloves garlic, crushed
  • 1teaspoons brown sugar
  • 460grams skinless salmon fillets (4-pack)
  • 500grams brown rice & riceberry
  • 150grams snow peas, trimmed
  • 1/4 bunch mint, leaves picked
  • 1/4 pineapple, peeled, cored, cut into 2cm pieces
  • 2 Lebanese cucumbers, finely chopped
  • 1 small red onion, finely chopped
  • 5milliliter extra virgin olive oil cooking spray

Description

Coat salmon fillets in a sweet chilli marinade and place in an air fryer for a quick nutritionally approved midweek dinner. Serve the succulent fish pieces with pineapple rice.

Method

Step 1 of 4

Combine chilli, soy sauce, garlic and sugar in a bowl.

Step 2 of 4

Preheat air fryer to 200°C for 3 minutes. Place salmon in a shallow dish. Spoon half of the sauce mixture over salmon.

Step 3 of 4

Line air-fryer basket with baking paper, trimming to fit. Using tongs, place salmon in basket. Slide pan and basket into appliance. Set timer for 6 minutes. Cook salmon, basting with any remaining sauce mixture halfway through, until cooked to your liking.

Step 4 of 4

Meanwhile, place rice in a microwave-safe bowl. Top with snow peas. Cover and microwave for 2 minutes or until heated through. Finely chop half of the mint. Combine pineapple, cucumber, onion and chopped mint in a small bowl. Divide rice mixture amongst bowls and top with salmon. Spoon over pineapple mixture. Serve.
