  • 1/2 can no-added-salt diced tomatoes
  • 2 tomatoes
  • 2/3 cup light shredded tasty cheese
  • 1/3 cup panko
  • 2teaspoons smoked paprika
  • 1 orange, zested, juiced
  • 1tablespoons Dijon mustard
  • 120grams baby spinach leaves
  • 1 green capsicum, chopped
  • 1/2packets Woolworths simply steam baby white potatoes, halved, steamed to serve

Description

Top succulent pork steaks with tomato, tasty cheese and a sprinkle of paprika panko for a delicious midweek family meal that's ready in 30 minutes.

Method

Step 1 of 4

Preheat oven grill to high. Line a baking tray with baking paper. Spray pork with oil. Heat a large non-stick frying pan over medium-high heat. Add pork and cook for 30 seconds each side or until browned all over. Transfer to prepared tray.

Step 2 of 4

Spoon diced tomato onto pork. Top with sliced tomato, then sprinkle with cheese. Grill for 3-4 minutes or until cheese melts and is golden brown.

Meanwhile, heat a large non-stick frying pan over medium-high heat. Add panko then spray with oil. Add paprika and cook, stirring, for 1-2 minutes or until fragrant. Remove from heat.

Step 4 of 4

Whisk orange zest and juice, mustard and oil in a jug. Place spinach and capsicum in a bowl. Add juice mixture and toss to combine. Spoon onto serving plates. Top with pork, cutting some in half if needed. Sprinkle with paprika panko. Serve with potato.
