  • 500grams green prawns, peeled and deveined
  • 4 cloves garlic, crushed
  • 2tablespoons plain flour
  • 1tablespoons smoked paprika
  • 1teaspoons cayenne pepper
  • 2 lemons, 1 zested and juiced, 1 cut into wedges
  • 1tablespoons extra virgin olive oil
  • 1 green capsicum
  • 1 red capsicum
  • 2 cups cooked brown rice, to serve
  • 2 cups baby spinach leaves

Description

Need a holiday? Jose’s healthier island-style garlic prawns are pretty close, packed with garlic, lemon and capsicum.

Method

Step 1 of 3

Add prawns, garlic, flour, paprika, cayenne pepper and lemon zest to a large bowl. Toss to combine.

Step 2 of 3

Heat oil in a large frying pan over medium heat. Add prawns and cook, stirring occasionally, for 2 minutes or until golden and cooked through. Add capsicum and cook for 2 minutes or until softened. Add juice of 1 lemon and stir to combine. Season with pepper.

Step 3 of 3

Serve garlic prawns with rice and spinach, with lemon wedges on the side.
