  • 1 brown onion, finely chopped
  • 3 cloves garlic, crushed
  • 1/2tablespoons paprika
  • 300grams spinach & kale power greens
  • 1 cup long-grain white rice
  • 1 cube vegetable stock cube
  • 2 lemons, juiced
  • 1/4 cup pickled jalapeños
  • 1/2 bunch mint, leaves picked
  • 540grams lamb leg steaks, trimmed of fat
  • 1/2 cup Greek-style yoghurt
  • 1tablespoons extra virgin olive oil

Description

Make dinnertime healthier with this nutritionally approved dish of succulent lamb leg steaks served with Greek-style yoghurt, spiced rice and mint chutney.

Method

Step 1 of 4

Add half of the oil to a large lidded frying pan over medium heat. Add onion, garlic and paprika and cook, stirring occasionally for 3 minutes or until onion is softened.

Step 2 of 4

Add spinach and kale and cook, stirring occasionally, for 2 minutes, or until wilted. Add rice, stock cube and 2 cups of water and stir to combine. Cover with lid, reduce heat to low and simmer for 10 minutes or until rice is tender.

Step 3 of 4

Place pickled jalapeños, lemon juice, half of the mint and 1/4 cup water in a small food processor or blender. Blitz until smooth. Set aside for serving.

Step 4 of 4

Add remaining oil to a large frying pan over medium-high heat. Season lamb steaks with remaining paprika and pepper. Cook for 4 minutes each side, for medium, or until cooked to your liking. Rest for 5 minutes. Serve with yoghurt, spiced rice, mint chutney and reserved mint leaves.
