  • 400grams honey soy tofu
  • 500grams brown rice & riceberry
  • 60grams baby spinach leaves
  • 2 carrots
  • 250grams Qukes® baby cucumbers
  • 2 spring onions
  • 200grams frozen edamame beans, blanched
  • 1/2tablespoons extra virgin olive oil

Description

Nothing says a nutritious meal like this flavour-packed vegan bowl of goodness featuring honey-soy tofu, colourful veggies and brown rice. Ready in 10 minutes!

Drizzling the salad with dressing just before serving will keep the salad crisp.

Method

Step 1 of 4

Heat oil in a large frying pan over medium heat. Add tofu and cook for two minutes each side, or until crispy.

Step 2 of 4

Slice each tofu piece into quarters.

Step 3 of 4

Vent packets of rice and cook according to package directions. Divide rice amongst bowls.

Step 4 of 4

Finely shred carrot, quarter cucumber and thinly slice spring onion. Divide tofu, carrot, spinach, spring onion, cucumber and edamame amongst bowls to serve.
