- 1 lime
- 2 cloves garlic, crushed
- 2 spring onions, sliced
- 500grams firm white boneless skinless fish fillets, cut into 2cm pieces
- 1/2 cup pepita seeds
- 350grams Woolworths kale slaw
- 300grams shredded carrot
- 2teaspoons wasabi paste
- 1/3 bunch coriander, sprigs picked
- 8 gluten-free white tortillas, heated
- 5milliliter extra virgin olive oil cooking spray
Description
Juicy fish tortillas loaded with crunchy wasabi slaw, fresh coriander and pepitas make a quick, easy weeknight dinner – and they're nutritionally approved!
Method
Step 1 of 4
Finely zest lime, then cut into wedges. Place zest, garlic, onion and fish in a large bowl. Spray with oil, then toss to coat.
Step 2 of 4
Spray pepitas with oil. Heat a large non-stick frying pan over medium-high heat. Add pepitas and cook, stirring, for 1-2 minutes or until toasted. Transfer to a plate.
Step 3 of 4
Return pan to heat. Cook fish in batches, turning occasionally, for 3 minutes or until browned and cooked through. Transfer to a plate.
Step 4 of 4
Place slaw into a large bowl. Add carrot and toss to combine. Place slaw dressing in another bowl. Add wasabi and half of the coriander and stir to combine. Add the wasabi dressing to the slaw. Top tortillas with wasabi slaw, fish, remaining coriander and pepitas. Serve with lime wedges.
