- 420grams corn kernels no added salt , drained
- 250grams cauliflower rice
- 250grams cherry tomatoes
- 2 cloves garlic
- 250grams microwave brown rice
- 3 spring onions, thinly sliced
- 1 long green chilli, thinly sliced
- 1/3 bunch coriander, leaves picked
- 5milliliter extra virgin olive oil cooking spray

Description
Whip up this nutritious cajun salmon with tomato and cauliflower rice tonight for an easy meal loaded with flavour.
Method
Step 1 of 4
Combine ground coriander, paprika and mixed herbs in a small bowl. Spray salmon with oil. Place salmon on a plate, then sprinkle with spice mixture.
Step 2 of 4
Heat a large non-stick frying pan over medium-high heat. Add salmon and cook for 2 minutes each side for medium, or until lightly browned and cooked to your liking. Transfer to a plate.
Step 3 of 4
Reheat pan. Add corn and cauliflower rice and cook, stirring, for 4 minutes or until browned. Add tomatoes and cook for a further 2 minutes or until softened slightly.
Step 4 of 4
Add rice and garlic to corn mixture and cook for 1-2 minutes or until tender. Add onion, half of the coriander and half of the chilli. Cook for 1 minute or until fragrant. Remove from heat. Spoon rice mixture onto serving plates. Top with salmon. Serve sprinkled with remaining chilli and coriander.
