  • 5milliliter olive oil cooking spray
  • 1 medium Macro Organic brown onion
  • 1 small Macro Organic green capsicum, halved, deseeded, thickly sliced
  • 500grams Macro Grass Fed Australian beef mince
  • 1tablespoons Mexican chilli powder
  • 1/2 bunch Macro Organic coriander, leaves picked and stalks finely chopped
  • 2 small Macro Organic gourmet tomatoes, finely diced
  • 1 small Macro Organic avocado, thinly sliced
  • 8 mini tortillas, grilled
  • 1 lime, cut into wedges

Description

For a healthier family dinner that's ready in 20 minutes, try this nutritionally approved taco recipe.

Method

Step 1 of 3

Lightly spray a large non-stick frying pan and place over medium-high heat. Cook onion and capsicum for 4 minutes, stirring, or until onion has softened and capsicum is starting to char on edges. Transfer onion mixture to a bowl and cover to keep warm. Lightly spray pan with oil and return to heat. Cook mince for 4 minutes, breaking up with a wooden spoon, or until browned. Add chilli powder and cook for 1 minute, stirring, or until fragrant. Return onion mixture to pan and stir to combine. Remove pan from heat.

Step 2 of 3

Place coriander stalks, tomato and cucumber in a medium bowl and stir to combine.

Step 3 of 3

Top mince mixture with salsa, avocado and coriander leaves. Serve with tortillas and lime.
