  • 1 eggplant, thinly sliced lengthways
  • 4 Lebanese bread rounds
  • 125grams canned chickpeas, rinsed, drained
  • 500grams lamb mince
  • 2 spring onions, thinly sliced
  • 2 cloves garlic, crushed
  • 1 free range egg, lightly beaten
  • 1/4 bunch mint, leaves picked, chopped (plus extra leaves to serve)
  • 1/4 bunch coriander, leaves picked, chopped (plus extra leaves to serve)
  • 2/3 cup tzatziki
  • 320grams mix-a-mato tomatoes, halved
  • 1tablespoons extra virgin olive oil

Description

Nutritionally approved and perfect as a weeknight dinner, these lamb kofta wraps feature juicy tomato, chargrilled eggplant and zingy tzatziki and are the perfect accoompaniment for an Aladdin-themed movie night.

Method

Step 1 of 4

Heat a large, greased chargrill pan over medium-high heat. Cook eggplant, turning, for 8 minutes or until charred and tender. Transfer to a plate and set aside. Heat bread on same pan, turning, for 2 minutes or until charred. Transfer to a plate and cover to keep warm.

Step 2 of 4

Meanwhile, place chickpeas in a bowl and mash with a fork. Add lamb, onion, garlic, egg, mint and coriander. Mix well. Using wet hands, shape 1/4 cupfuls mixture into 8 ovals.

Step 3 of 4

Cook kofta on chargrill pan over medium-high heat, turning, for 10 minutes or until cooked through.

Step 4 of 4

Top bread with tzatziki, eggplant and kofta. Scatter over tomato and extra mint and coriander. Season with pepper. Serve drizzled with oil.
