  • 1/3 cup lite milk
  • 1 free range egg, lightly beaten
  • 5milliliter olive oil cooking spray
  • 1/2 cup light Greek-style yoghurt
  • 2teaspoons honey

Description

Fluffy pancakes filled with banana pieces, these kid-friendly morsels are nutritionally approved and perfect for breakfast or as an afternoon snack.

Method

Step 1 of 3

Sift flour and baking powder into a large bowl. Make a well in centre. Add milk and egg, then stir gently until just combined. Stand for 15 minutes to rest.

Step 2 of 3

Lightly spray a large non-stick frying pan with oil and place over medium heat. Working in batches, coat banana in batter, then place in pan. Cook for 2 minutes or until bubbles appear on surface. Flip and cook for a further 1 minute. Transfer to a plate and cover to keep warm. Repeat with remaining banana and batter.

Serve pancakes with yoghurt drizzled with honey.
