  • 2 small Pink lady apples, peeled, cored, diced
  • 3/4 cup traditional rolled oats

Description

Ready in just 3 steps, these scrumptious wholemeal apple muffins are great to fill little tummies for a healthier breakfast or snack.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a 12-hole, 1/3-cup capacity muffin pan with paper cases.

Step 2 of 3

Place flour and sugar in a large bowl and stir to combine. Whisk oil, eggs, milk, apple sauce and cinnamon in a large jug until combined. Add egg mixture to flour mixture and fold with a spatula until just combined. Fold in apple and 1/2 cup oats.

Step 3 of 3

Divide mixture among paper cases. Sprinkle with remaining oats. Bake for 25 minutes or until muffins are golden and spring back when gently pressed. Stand muffins in pan for 10 minutes to cool slightly. Serve warm or at room temperature.
