- 850grams Macro Organic no-added-salt cannellini beans, rinsed, drained
- 800grams Woolworths diced tomato with onion, garlic & basil
- 2tablespoons Woolworths extra virgin olive oil
- 4 pita bread pockets
- 60grams baby spinach leaves
- 100grams Woolworths Danish feta, crumbled
- 1/4 bunch continental parsley, leaves picked and coarsely chopped
Description
This quick and easy Greek-style baked beans combines beans, tomato, spinach and feta, and is perfect for a hearty breakfast on the go.
Instruction tip
Make-ahead tip:Prepare the bean mixture ahead, reserving the feta, parsley and remaining baby spinach. Store in an airtight container in the fridge. Reheat individual portions in the microwave or full quantity in a large frying pan over medium-low heat until hot.
Method
Step 1 of 3
Place beans and tomato in a large frying pan. Stir over medium-high heat for 3-4 minutes or until mixture comes to the boil. Reduce heat and simmer for 2 minutes or until heated and combined.
Step 2 of 3
Meanwhile, heat oil in a small frying pan over medium-high heat. Cook pita, in batches, for 1 minute each side or until golden-brown. Transfer to a plate. Cover to keep warm.
Step 3 of 3
Stir half of the spinach through beans and cook, stirring, for 2 minutes or until spinach wilts. Top beans with feta, parsley and remaining spinach. Season with freshly cracked black pepper. Serve with toasted pita.
