  • 1/4 cup flaked almonds
  • 500grams Woolworths frozen Australian brussels sprouts
  • 100grams Woolworths shortcut bacon, cut into 1cm pieces
  • 500grams potato gnocchi
  • 1 clove garlic, crushed
  • 20grams unsalted butter, at room temperature
  • 40grams Woolworths Australian parmesan, finely grated

Description

With an irresistible roasted butter flavour, these crispy, golden-brown gnocchi with tender Brussels sprouts will satisfy even the pickiest eaters. You can even add your leftover frozen vegetables to this buttered Brussels sprout gnocchi dish.

Method

Step 1 of 3

Preheat a 5.75L air fryer to 180°C. Spread almonds over base of air-fryer basket. Toast for 2 minutes or until light golden. Transfer to a plate.

Step 2 of 3

Spread sprouts over base of air-fryer basket. Scatter bacon evenly on top, followed by gnocchi. Cook for 10 minutes. Use a large metal spoon to toss the mixture. Return to air fryer for a further 6 minutes or until sprouts are golden and gnocchi is light golden.

Step 3 of 3

Add garlic. Toss through. Cook for a further 1 minute. Remove basket. Add almonds, butter and half of the parmesan to gnocchi in basket. Season with freshly cracked black pepper and toss until butter coats mixture. Divide among serving bowls. Top with remaining parmesan.
