- 3 cups Woolworths frozen Australian carrots, peas & corn
- 1/4 bunch coriander
- 3/4 cup self-raising flour
- 35grams Woolworths taco seasoning
- 3 eggs
- 1/2 cup Woolworths tasty shredded cheese
- 2tablespoons extra virgin olive oil
- 1 avocado, chopped
- 3/4 cup light sour cream
Description
A delicious fusion of Mexican and American flavours, these taco fritters are a perfect way to transform frozen veggies into an easy weeknight meal.
Method
Step 1 of 3
Place frozen vegetables in a large heatproof bowl. Cover with 2 cups boiling water. Set aside for 5 minutes. Using a colander, drain well.
Step 2 of 3
Finely chop half of the coriander. Place flour, seasoning, eggs and cup water in large bowl. Mix until well combined. Add vegetables, coriander and cheese. Stir until well combined.
Step 3 of 3
Heat 2 tsp oil in a large non-stick frying pan over medium heat. Place 2 tbs mixture into pan and spread into an 8cm round. Repeat to make 4 fritters. Cook for 2 minutes each side or until golden and cooked through. Repeat with remaining oil and mixture in batches to make 16 fritters in total. Separate remaining coriander into sprigs. Divide fritters among serving plates. Top with avocado, sour cream and coriander.
