Instruction tip
Use-it-up tip:This recipe uses a combination of leftover ingredients from the Smashed sausage, egg & cheese tortillas and Greek-style baked beans recipes. However, any leftover vegetables can be used also.
Method
Step 1 of 3
Preheat oven to 170°C/150°C fan-forced. Grease a 24cm (base) square cake pan. Line with baking paper, extending paper 2cm above edge on two opposite sides. Heat a large non-stick frying pan over medium-high heat. Add sausage and cook, stirring occasionally, for 5 minutes or until cooked and browned. Cool.
Step 2 of 3
Whisk egg, cream and flour in a large jug. Pour egg mixture into prepared pan. Add sausage, spinach, tomato and feta. Top with cheese. Season with freshly cracked black pepper.
Step 3 of 3
Bake for 35 minutes or until cooked through and golden-brown. Cool slightly in pan. Cut into pieces. Serve.
