  • 400grams fettuccine
  • 80grams butter
  • 1tablespoons olive oil
  • 4 cloves garlic, peeled and minced
  • 400grams chicken breasts, skinless, sliced
  • 2 medium zucchini, peeled into ribbons
  • 1 medium lemon zest
  • 50grams parmesan
  • 3tablespoons parsley, fresh, chopped
  • 1 pinch cracked black pepper

Description

This simple chicken and zucchini fettuccine in a garlic butter sauce is a quick and satisfying midweek meal option.

Method

Step 1 of 3

Cook the fettuccine according to pack instructions and drain, reserving a couple of tablespoons of starchy water.

Step 2 of 3

Melt the butter in a large pan on medium heat with the oil, add the chicken slices. Cook for 6 minutes, add the garlic and cook for 2 minutes. Stir in the lemon zest and zucchinis and cook for 2 minutes.

Step 3 of 3

Add the pasta, starchy water as necessary, parsley and black pepper, toss well and cook for 1 minute to warm through. Serve with parmesan on top.
