- 300grams broccolini, chopped
- 300grams pesto
- 1 medium lemon, juice and zest
- 75grams rocket
- 400grams fettuccine
- 50grams parmesan, grated

Description
Use your favourite store bought pesto to make this speedy fettuccine with juicy chicken thighs.
Method
Step 1 of 3
Bring a pot of water to the boil and cook the fettuccine according to pack instructions and drain, reserving a couple of tablespoons of starchy water.
Step 2 of 3
Heat the oil in a large pan on medium heat and cook the chicken for 5 minutes, stirring, add the broccolini and lemon juice and zest and cook for 2-3 minutes. Stir in the pesto.
Step 3 of 3
Tip the fettuccine into the pan and toss to coat, adding starchy water as necessary. Stir in the rocket, top with parmesan and serve.
