  • 4tablespoons plain flour
  • 1tablespoons breadcrumbs
  • 1 pinch salt (to taste)
  • 1 egg

Description

A simple but delicious recipe for potato fritters that make for a quick snack.

Method

Step 1 of 11

In small saucepan on medium heat add potatoes and fill with water. Boil for 10 mins.

Step 2 of 11

Remove from heat and allow to cool.

Step 3 of 11

Peel potatoes and grate into bowl. Set aside.

Step 4 of 11

In a stainless bowl add grated potatoes, chopped parsley, grated parmesan, plain flour, egg and breadcrumbs.

Mix until well combined. Season to taste with salt. Set aside.

In a frypan add sunflower or olive oil on medium heat.

Spoon a large tablespoon of potato mixture and make a round ball, flatten and place on a tray ready for frying.

Repeat the process until all mixture is used.

In frypan space out fritters and fry until golden brown turning only once.

Transfer to plate with paper towel to absorb oil.

Place cooked fritters on serving dish and serve. Enjoy!
