  • 4tablespoons plain flour
  • 2 eggs, lightly beaten
  • 125grams fine polenta
  • 1teaspoons smoked paprika
  • 1 pinch salt

  • 1/4 cup sunflower oil, for frying
  • 8 tortillas, warmed (to serve)
  • 1 leaves lettuce (to serve)
  • 1/4 cup spring onions, finely sliced (to serve)

  • 1/2 cup Greek yoghurt (to serve)

Description

Anything served in a wrap is a sure family favourite, as it enables everyone to assemble their own as they like.

Instruction tip
Use any kind of white fish you like in this recipe, or fish pie mix for variety.

Method

Step 1 of 4

Pat the fish dry with kitchen paper. Lay the flour, eggs, and polenta out in 3 wide, shallow bowls. Toss the flour with the smoked paprika and season it well.

Step 2 of 4

Coat the fish pieces by dusting them first with the seasoned flour, then dipping them in the eggs, then rolling in the polenta, until they are well covered. Put them on a plate, cover with cling film, and rest in the fridge for 30 minutes. This helps the coating to stick.

Step 3 of 4

Heat a 1cm depth of oil in a large, deep-sided frying pan. Fry the fish chunks for 2 minutes on each side, turning them carefully, until golden brown and crispy all over. Do not crowd the pan; you may need to cook in 2 batches. Rest on a plate lined with kitchen paper while you cook the rest.

Serve the fish with the warmed tortillas and a selection of accompaniments for everyone to assemble their own wraps.
