- 1tablespoons olive oil
- 2 large red onions, peeled, finely sliced
- 2 large capsicums, red and green, sliced
- 1 cloves garlic, peeled and minced
- 1 medium red chilli, finely chopped
- 1teaspoons cumin
- 1teaspoons smoked paprika
- 4 large cod fillets, chopped into chunks
- 8 tortillas
- 2 medium lime
- 1 large avocado
- 1/2 bunch coriander, fresh, chopped
Description
Fish tacos will become your new favourite way to have a healthy and quick Mexican style dinner.
Instruction tip
Use any kind of white fish you like in this recipe, or fish pie mix for variety.
Method
Step 1 of 4
Heat half the oil in a large frying pan on a medium high heat and add half the sliced onions, cook for 2 minutes and add the sliced capsicums. Cook for 2 minutes then add a garlic clove, chopped chilli and smoked paprika. Stir to coat and cook for 1 more minute. Squeeze over half a lime and remove from the pan with a slotted spoon.

Scoop the avocado into a medium bowl and mash with a fork. Add juice of half a lime, garlic, a teaspoon of finely sliced red onion and half the chopped coriander and mix to make guacamole. Place the remaining sliced onion in a small bowl and cover with the juice of half a lime. Set aside to steep.
Step 3 of 4
Heat the rest of the oil and tip in the cod, sprinkle with cumin and cook for 2-3 minutes on each side until flaky and cooked through. Squeeze over half a lime.
Step 4 of 4
Warm tortillas in the microwave or in a dry griddle pan for 30 seconds each side, top each with onion and capsicums, cod, guacamole and lime pickled red onions and serve.
