Give the little ones a head start to their day with this healthier breakfast idea. They'll love this gooey eggy toast with vibrant tomato salsa.

Method

Step 1 of 4

Using a 5.5cm round cookie cutter, cut a hole in centres of bread slices (see Tip).

Tip:
Spread a little avocado or hummus on the leftover circles of bread to have as a snack.

Step 2 of 4

Lightly spray a large non-stick frying pan with oil, then place over medium-low heat. Cook bread for 3 minutes or until golden and toasted. Turn bread over. Crack an egg into centre of each slice. Cook for 8 minutes or until egg whites have just set.

Meanwhile, combine tomato and chives in a small bowl.

Serve eggy bread topped with tomato salsa.
