- 1 vanilla bean, halved lengthways
- 1L no-added-sugar grape juice
- 1 stick cinnamon
- 2 star anise
- 2teaspoons maple syrup

Description
An easy to make, healthier dessert that serves 6. Sweet apples are poached to perfection with vanilla bean, cinnamon and star anise for sublime flavour.
Method
Step 1 of 3
Scrape seeds from vanilla pod, then place seeds and pod in a medium saucepan with juice, cinnamon, star anise, maple syrup and apples. Bring to a boil over high heat. Reduce heat to medium-low and simmer, uncovered, for 15 minutes, turning occasionally, or until apples are tender. Remove apples and set aside. Discard vanilla pod and reserve 11/2 cups poaching liquid.
Step 2 of 3
Return reserved liquid to pan and bring to a boil over high heat. Reduce heat to medium and simmer, uncovered, for 15 minutes or until poaching liquid has reduced by half.
Step 3 of 3
Divide apples and poaching liquid among bowls. Serve topped with yoghurt and nuts.
