  • 3 fresh strawberries, hulled, thinly sliced

Description

This slice of nice is the perfect snack to help get you through the day when you're on the go. Delicious strawberries, almonds and dates in one handy slice.
Instruction tip
Variation:
To replicate the flavours of a peanut butter and jelly sandwich, use natural peanut butter instead of almond butter.

Method

Step 1 of 4

Place dates, 2 tbs boiling water, almonds and 1 tbs almond butter in a food processor. Process until roughly chopped and mixture comes together. Line a 13 x 24cm (6.5cm deep) loaf pan with 2 layers baking paper, extending paper 3cm above edges. Using back of a metal spoon, press date mixture over base of pan to compact.

Step 2 of 4

Place frozen strawberries, syrup, vanilla and 2 tbs water in a small saucepan. Bring to a simmer over medium heat. Reduce heat to medium-low and simmer, uncovered, for 12 minutes, stirring occasionally, or until reduced by half and thickened. Stir in chia seeds.

Step 3 of 4

Pour strawberry mixture over date mixture. Dollop over remaining almond butter and swirl with a skewer to create a marbled effect. Arrange fresh strawberries on top and sprinkle with extra almonds. Freeze for 2 hours or until firm.

Step 4 of 4

Remove slice from pan and cut into 6 pieces. Serve
