- 1 1/2 cups Macro Organic natural cashews
- 1/3 cup Macro Organic cacao powder
- 1/2 cup Medjool dates, pitted, roughly chopped
- 2tablespoons Macro cashew spread
- 1tablespoons Macro date syrup
- 1teaspoons vanilla extract
- 1/4 cup Organic Macro cacao nibs
Description
Try this plant-based cookie recipe made with cashews and cacao for a healthier sweet treat. The best part? No baking required.
Method
Step 1 of 3
Place cashews in a food processor and process for 5 seconds or until roughly chopped. Reserve 1/3 cup and set aside until needed.
Step 2 of 3
Process remaining cashews for a further 15 seconds or until a fine crumb forms. Add cacao powder, dates, cashew spread, date syrup and vanilla. Process for 15 seconds or until mixture just starts to clump. With food processor on low speed, slowly add 1 1/2 tbs water until mixture is a dough-like consistency. Add cacao nibs and half of the reserved cashews. Process until cacao nibs and cashews are evenly distributed.
Step 3 of 3
Using damp hands, roll 1 heaped tablespoonful of mixture into a ball. Gently flatten in palm, then place on a small baking paper-lined baking tray. Repeat with remaining mixture to make a total of 12 cookies. Scatter over remaining cashews, then gently push into cookies to secure. Refrigerate for 2 hours or until firm. Serve.
